This is a battery issue. When your phone's power draw spikes for a few second and it shuts down the entire phone. Every time I leave my house the WiFi completely turns off and does not turn back on unless I go into settings and turn it back on myself. The only suggestions that I can find online is that it might be the WiFi Assistant feature.

I believe when you turn off MIUI optimization, this changes the behavior of how the apps are managed in the background. In the MIUI 11 Stable changelog made by xiaomi.eu, it says this "Optimized RAM consumption" and I'm not sure if that is related to the MIUI optimization changes.
